Kalu Pol Chicken curry is a dish as rich in flavour as it is in history. Originating from the vibrant landscapes of Sri Lanka, this culinary gem is known for its deep, black hue and bold taste. "Kalu Pol" essentially translates to "black coconut," capturing the essence of the roasted coconut used in crafting the curry paste.

Picture this: a mouthwatering blend of chicken, spices, and coconut milk, all simmered perfectly in the savoury Kalu Pol paste. We start by tossing a blend of coconut, rice, aromatics, and spices into a wok and heating it until it's dry. After blending it into a powder, we generously coat the chicken with our special Kalu Pol mix. We sauté more aromatics and vegetables in a pan, adding in the marinated chicken. Let it mingle on low heat, covered with water until the gravy thickens. Simmer it until the chicken's perfectly cooked. Voilà is a mouthwatering, flavorful curry served with your choice of starch–steamed rice or our signature Karapincha Roast Pan.
